Commonly referred to as Périgord Truffle, they have a strong, luscious aroma and flavour. Like the amazing wine grown in the North Canterbury area, our truffle also shows provenance and varies throughout the season. Some flavours that are commonly used to describe our truffle are earthy, sweet forest floor, beetroot, raspberries and of course umami-packed!
BioGro Certified organic #6399
New product is loaded every Tuesday evening during the harvest season. If you want to receive your truffle before the weekend please ensure that orders are placed before 12 noon Thursday ready for Friday delivery.
Please Note: Truffles may be cut or be large pieces making up the ordered weight.
Serving suggestions
Traditionally fresh black truffle is most commonly enjoyed with dishes like pasta, risotto and eggs. However, they do lend themselves to more creative dishes so don't let this limit you! Some of my favourite, not so traditional dishes, have been burgers and fries, sushi, creamy desserts or simply grated on a good vanilla ice cream!
If it is your first time using truffle keep things simple with quality ingredients, allowing your truffles to shine with foods and dishes that have a more subtle flavour... Think butter, creams, baked brie, eggs, pasta, mashed potatoes, soups, etc.
Our truffle butter is also a great way to use fresh truffle and very easy and versatile to use.

How much truffle do I need?
This really depends on the dish, personal preference and how decadent the dish. Some prefer a subtle approach while others can't get enough. Around 5 grams per dish per person for the subtle approach is ample, while anything over 10grams per dish per person for the more extravagant.
How do I store my truffle?
On receiving your truffle wrap in a paper towel and place into a sealed container, glass jar or even a zip lock bag. Keep the container in the crisper compartment of your refrigerator avoiding the cooler areas of the fridge. Change paper towel daily to avoid the truffle getting damp.
Truffle starts deteriorating as soon as it leaves the ground so is best to keep this in mind when making plans and orders. We recommend using it within 7 - 10 days to ensure you can infuse some foods first but then also use fresh.
You can also store your truffle with certain foods that take on the truffle flavour. Some of these include eggs (the flavour can be absorbed through the semi permeable shell of a raw egg), cream and milk, cheese and butter.
How will my truffle be sent?
- Orders are sent Monday - Thursday on an overnight courier (this may be longer for rural delivery options).
- Truffles are packaged in a display jar (larger orders are vacuum packed). All perishable orders are sent with ice packs in a recyclable chillbox.
- Order weight of fresh truffle is the minimum amount that will be supplied. The truffles are packaged in a variety of sizes which will amount to the total amount of grams ordered.
- Orders must be placed by 9am Wednesday to ensure delivery before the weekend, otherwise it will be sent the following Monday.
