Fresh truffles they are best used within 7 days but by using a few clever techniques you can extend the truffles life as well as make it go further. This amazing fungi loves fat, and the aroma is able to permeate many foods with a good fat content. These can then be used alone to create a truffle dish or with fresh truffle shaved on top for an extra truffle kick. Some examples of foods that can be infused with truffle are:
Eggs (both raw and hardboiled, only the yolk will be infused as this is what has the fat content). - Approximately 10-15grams of truffles will easily infuse 8 large eggs that can then be slowly scrambled or fried, used to make ice cream and desserts, pasta etc
Cream - Then use in/on desserts, ice cream, sauces, soups, mashed potato etc
Cheese - Serve as is, mac and cheese, sauces, toasties
Butter - Smothered on warm bread, sauces, over vegetables or meat to serve (or you can purchase our Truffle Butter that has already been infused and has 10% of fresh truffle mixed through for an extra truffle kick).
Avocado - Salads, guacamole with a secrete, the ultimate sandwich or burger
Fatty fish
The infusion should take 2-3 days. Store the truffle in an airtight glass container with the food for infusion along with a paper towel to absorb any moisture, this may need to be changed daily.
Once you have finished doing your infusions you can then carefully clean your truffle with cold water if needed and dry using a paper towel then leave to air dry. It is then ready to be used in other dishes either in the preparation or shaved on top to finish. Think shaved onto your steak while it is resting, fresh pasta or a creamy mushroom risotto or even added to a quality brie and left for 3 days before serving.
